Description
This line is hand-forged from SG2 (R2) Powdered Steel, an especially hard metal known for very good edge retention. The blades are hand sharpened by most sensible craftsman, Takayuki Shibata, and have stainless cladding for more straightforward maintenance and textured sides to stop sticking. The original shape is a cross between a gyutou and nakiri – with the additional advantage of the pointed square tip to attain proteins and vegetables. The Kotestu line takes its name from Japan’s first iron-clad ship.
