The Yasuki- white steel is a very pure and hard steel with the least impurities a number of the several types of steel. It is incredibly easy to cut with, and if you happen to were to cut sashimi, you could think that you were cutting with a razor! Unlike the Hon-yakis, which might be time consuming and difficult to sharpen, the Kasumis are more practical. Please understand that to clean and dry the knife after every use.
