This Yanagiba style knife is product of Hitachi Metals Yasuki Steel, which holds its sharpness for longer, and is delivered from Sakai, a center of traditional swordmaking crafts.
The Japanese style knives “Shouo” Yasuki steel series are manufactured with an emphasis on ease of use for artisans such as sushi and traditional Japanese cuisines chefs.
Every knife is home made in a traditional process, forged by Sakai smiths and moderately honed at Sakai cutlery.
The take care of is product of magnolia wood with an inlay of water buffalo horn. Use of buffalo ivory enables the blade to be heated, then thrust into the take care of, and because the heat cools, the blade contracts, making it more firmly held within the take care of.

Features: The Sakai Shouo genuine kasumi Yasuki steel series is made with a steel core and wrought iron surface. Its greatest strengths are its easy to sharpen and chip-resistant edge.
Caution: These blades are the sharpest you’ll in finding, but they aren’t very proof against rust, so please take care of them with care. Please rinse and wipe thoroughly after use.
