Our 7? Artisan Santoku Knife is designed for the professional chef. The blade is very similar to a Western Chef knife with the cutting qualities of the most efficient Japanese made knives. The maker adopted powdered steel technology in order that the blade would have a high hardness (Rc64) and would withstand rust. The blade is a forged triple layered structure. The center layer is SRS-15 powdered steel in the beginning designed for metal cutting tools The cladding layers are soft SUS-405 stainless steel. This gives the blade an exceedingly tough, long lasting and chip withstand edge but yet is easy to resharpen. A forge welded bolster seals the blade from the take care of. And for strength and longevity, the triple riveted tang runs the full length of the take care of. The well shaped, comfortable take care of is made out of a couple of wood layers infused with resin for a life time of use. Both take care of and tang are tapered for better balance and reduced fatigue all over long use. The blade length is 7?, and overall length is 12?.

The master blacksmiths hand hammer a lamination of high carbon “white steel” between two layers of soft wrought iron.
The handles are made out of Ho wood.
