This Chinese Cleaver is hand forged by the Mizuno Circle of relatives in the Akitada Hontanren manner. Which means that the blade is forged in the old style, one hammer blow at a time. There are few smiths left that may claim the hontanren title. To form the blade, Mr. Mizuno forge welds the most efficient quality high carbon steel to soft wrought iron. Each and every blade is personally heat treated and hardened to Rc63. Very few pieces of Akitada Hontanren knives are made Each and every year, and they’re highly sought after by professional chefs. A traditional style rustic Japanese Oak take care of completes the knife. Akitada Hontanren Chinese Cleavers are sent with a razor sharp edge. Blade length is 210mm, overall length is 325mm and weighing 344 grams.
