Our Tojiro Damascus Vegetable Knife Kakugata Nakiri Hocho is made by the use of Japanese traditional techniques and brand new equipment. The blade is composed of 36 alternating layers of hard and soft stainless steel. The center layer of the blade is forged from Swedish high carbon stainless cutlery steel with the D.P (Decarburization Prevention) method Patent No.962010 to take care of high performance right through the lifetime of the knife. As the maker says “The form is beautiful, the edge holding is excellent and they’re easy to resharpen. The more you use them, the more satisfied you’re going to be.” Every knife comes razor sharp in an attractive gift box with instructions for care and maintaining this edge. The master blacksmiths hand hammer a lamination of high carbon “white steel” between two layers of soft wrought iron.
The handles are constructed from Ho wood.
