Our Takagi Honyaki Nakiri knife is hand forged from #1 grade blue steel. Hon Yaki knives don’t seem to be laminated within the traditional sense but are produced from a single piece of steel time and again folded and forged. Considerable skill is required to forge after which temper these knives. The tempering process is like that of a sword. The un-tempered blade is coated with varying thickness of a special clay mixture. Like a Samurai sword, the blade is heated within the charcoal forge until red hot, after which thrust into water to quench. As you’ll believe all of these processes are done by eye and feel and require years of experience to master. Blade length is 6½? and overall length is 11?. Every knife is sent razor sharp in a phenomenal gift carton.

The master blacksmiths hand hammer a lamination of high carbon “white steel” between two layers of soft wrought iron.
The handles are produced from Ho wood.
They come well sharpened with instructions for maintaining a razor edge. The small blade makes a super paring knife for fruit and vegetables.
