Our 11¾? Shigeki Damascus Yanagiba Sushi Knife is hand forged by 4th generation blacksmith Shigeki Tanaka. For more than 100 years, the Tanaka circle of relatives has been noted for their high-quality farming tools. Because of declining demand for farm tools, the circle of relatives started making cutlery. To increase their technique, they apprenticed their youngest son, Shigeki, to a famous Takefu knife maker. Since returning to his father’s shop, Shigeki has develop into noted for the quality of his knives. Every blade is hand forged from a lamination of high carbon blue steel and a Damascus material consisting of stainless and nickel steel in 14 alternating layers. After tempering to Rc64 the blade is polished to a razor edge. The maker’s mark is hand graved at the blade and a magnolia wood maintain is installed. The pattern on Every knife is unique. Blade length is 11¾? and overall length is17½?. A Kiri Wood treasure box is included with Every knife.

They come well sharpened with instructions for maintaining a razor edge. The small blade makes an excellent paring knife for fruit and vegetables.
