Our 10-3/4″ Sushi Slicing Knife is a hand forged, triple layered structure. The center layer is rust resistant SKD die steel at the start designed for cutting metal. The cladding layers are soft SUS-405 stainless steel. This offers the knife an exceedingly tough, long lasting edge and yet is easy to resharpen. This style of knife is recurrently used for slicing Sushi rolls. But you are going to find it excellent for slicing foods of all types. The stainless steel bolster between the blade and the deal with is comprised of slices of hardwood impregnated with resin. The maker Mr. Tsuneo Yoshida is proud of the hand hammered surface which creates a well balanced knife of lasting beauty. The blade length is 10-3/4 and overall length is 14½?.
